Choosing Sulphites
Antimicrobials and antioxidants are considered indispensable by most enologists, the innovative ones, too. Of course, zero additives would be better. But even amongst those who can't do without them, the idea that sulphites should be more focused is growing. Below the legal limit of 150mg/liter for reds (200 for whites). At least for additives. No wine contains zero sulphites: although some are produced. Terra di Melazzano's 2013 IGT CosìComè comes from the hillsides of Greve in Chianti leading up to Mount San Michele. It's made up of pure Sangiovese and is 13% alcohol. Just like the name itself describes (CosìComè translates as Just Like it is), there are no sulphites. Except for those 'naturally produced during fermentation', as Terre di Melazzano claims. A peculiarity that represents a meaningful trademark for this wine. Intense ruby red coloring, the fragrances of CosìComè recall red peaches. On the palate, it is smooth and opens up immediately following a hint of acidity. Tannins are still green and coat the tongue that sticks briefly to the roof of the mouth: a sign that the wine is still young with a bright future for ageing. The finish is slightly bitter. Terra di Melazzano's 2013 IGT CosìComè costs around €6.

"This great fruit is never harsh and remains true to its unoxidized nature. Vivid, full, with tannins, but mostly dense and long, completely and smoothly mature. Several notable qualities: the density of the grapes, the balanced tannins, the superior enological cleanliness giving way to its aromas, high definition. All shining through the dark in each reflection, polished expression."

"Two handsome Chianti Classicos that are cherry red, the 2009 a bit fuller, the 2007 Chianti Classico Reserve more expressive. The caliber of a superior red presented by Terre di Melazzano.
